Repotted my bell pepper, the one in the round pot and brought both it and my jalapeño inside to overwinter.

The rest of the chilli plants I stripped back to stems and also brought inside to store till next year.

Keeping in water is only temporary; I will repot into small tubs and keep dormant till next year
